Citrus Icebox Dessert

You can use fat free versions of any of the following ingredients.  Some even come in sugar free versions.



Ingredients for filling:

1  8 oz package of cream cheese
1 14 oz can of sweetened and condensed milk
1 small envelope of pink lemonade Kool Aid
1  6 oz container of vanilla yogurt
Juice of 1/2 pink grapefruit

1 1/2 packages of graham crackers broken into individual crackers
(This is 1/2 of a regular sized box of graham crackers.)

Ingredients for topping:

1 cup white chocolate chips
1/2 tub of cream cheese icing
Juice of 1/2 pink grapefruit
1/2 tsp lemon flavoring
2 drops of red food coloring




Soften cream cheese.  Stir in the sweetened and condensed milk.  Stir in Kool Aid and vanilla yogurt until well blended.  Stir in the juice of 1/2 of a pink grapefruit.

Place a single layer of graham crackers in the bottom of an 8 x 8 pan.  Cover with 1/2 of the cream cheese mixture.  Place another layer of graham crackers on top of the cream cheese mixture.  Pour the remainder of the cream cheese mixture on top of the second layer of graham crackers.  Place a final layer of graham crackers on top of the 2nd cream cheese layer.

Melt the white chocolate chips in the microwave and stir until smooth.  Stir in the cream cheese icing and heat for an additional 20 seconds.  Stir in the juice from the other half of the grapefruit, the lemon flavoring, and the food coloring.  Mix thoroughly.  Pour over the final layer of graham crackers and spread evenly.  Refrigerate for at least 2 hours before serving.
