BBQ Chicken Pizza

I may not be posting any recipes for the next couple of days because my husband changes shifts today, and he won't be home for supper.  That will be a good excuse for my son, my mother-in-law, and me to go out to eat a few times.  :-)


Ingredients for chicken:

1.5 lb thin sliced boneless, skinless chicken breasts
3 TBS olive oil
BBQ Seasoning (I used some from Pampered Chef, but you can buy other brands in the spice section of most grocery stores)
Smoked paprika

Heat the olive oil over medium heat in a large skillet.  Wash the chicken breasts and sprinkle each side well with both the BBQ seasoning and the smoked paprika.  Place chicken in hot oil and cook for about 4 minutes on each side or until the juices run clear.  The cooking time will be longer if you do not get "thin sliced" chicken.  Remove the chicken from the skillet and allow to cool before slicing.



Ingredients for the Sauce:

1 cup ketchup
1 TBS brown sugar
1 tsp apple cider vinegar
1 tsp cane syrup or molasses
1 tsp prepared yellow mustard
1/2 tsp chili powder
1/2 tsp black pepper
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp turmeric
1/4 tsp thyme
1/4 tsp cumin
1/4 tsp celery seeds
1/4 tsp cayenne pepper
1/8 tsp allspice
*1/2 cup apple juice (for deglazing the pan)

After removing chicken from skillet, deglaze the hot skillet with the *1/2 cup of apple juice.  Reduce the heat and add all of the sauce ingredients to the skillet, stirring well after each addition.  Cook on low for 10 minutes.



While the sauce is simmering, slice the cooked chicken into bite-sized pieces.



Remaining Ingredients:

1 tube of refrigerated pizza dough (or you can make your own)
1/2 of a medium sweet onion (chopped)
1 cup shredded Swiss cheese
1 cup shredded Mozzarella cheese

Place prepared dough onto a greased cookie sheet or pizza stone.  Spread sauce on top of dough.  Place chicken pieces on top of the sauce.  Add the chopped onions.  Sprinkle both types of cheeses over the top of the pizza. 



Bake at 425 degrees for 15 to 17 minutes or until the cheese is bubbling.  Serve with a salad or slaw.  Enjoy!
